I recently found the Hungry Girl show on Cooking Channel and like a lot of her ideas - omelet in a mug is one of my favs! She made an iced coffee treat that had a lot of ingredients I can use and the rest easily substitute. I stuck to her proportions and carefully measured the ingredients that add calories - especially the sweetner! Below is my take on her original idea:
Lisa's Iced Coffee Treat
- 1/2 cup dark roast coffee - brewed, cool on the counter while assembling the rest of the ingredients
- 2 tsp. malted milk powder
- 1 tsp. unsweetened cocoa powder (I use Hershey's Special Dark)
- 2 tsp aguave
- 1/2 cup low fat or fat free milk
- 1 tsp vanilla
- 5 - 8 ice cubes or 1 cup crushed ice
- Optional topping: Fat Free Reddi-wip
In the bottom of a heat-proof glass, mix the malted milk powder, cocoa powder and aguave. Add the cooled coffee to the glass and stir to combine. Add the milk, ice and vanilla and stir. Add Reddi-wip (if using) and serve with a straw.
Yum!
